  • Bel Group is rolling out Babybel Protein to select European markets.
  • The product is in response to growing consumer interest in protein snacks.
  • Described on packages as being made with only four ingredients—a glass of milk, a pinch of salt and lactic ferments for flavor, and rennet—one puck packs in 5.2 grams of natural dairy protein and contains 48 calories. The Original contains 70 calories and 4 grams of protein.
  • The 20-gram pucks come in the brand’s original red wax covering with an overlay of black branded cellophane in order to be identified as the protein-packed product. In some markets, the pucks are making their debut in home-recyclable paper wrap, replacing the previous biodegradable cellophane.

  • After using a specific melting cheese for menu items for 45 years, Michael’s Grill & Salad Bar of Highland Park , Ill., was known for its comfort food classics topped with this delectable addition.
  • Owner Ryan Gamperl noticed in 2023 that the cheese wasn’t melting as it originally had. After burning several batches, a confused Gamperl reached out to the manufacturer directly and they informed him they’d modified their recipe. Gamperl found this modification compromised his menu items, so he sought out to develop something better.
  • Gamperl headed to Mar’s Cheese Castle in Kenosha, Wisc., to find a temporary solution to his melting cheese problem as the current option was not going to fly with his customers. Through Mar’s, he found a manufacturer that was willing to work with him on a recipe specific for melting. After many tweaks over several months that included adding more cheddar, trying different whey proteins, testing for creaminess and more, they found themselves serving their guests Michael’s very own premium melting cheese.
  • Customers noted the change and were thrilled with the new recipe and often said “you should sell this so we can take this home.” Additionally, he found himself talking with other restaurants who were facing melting problems with the previous cheese and realized “ok, it’s time to share this with everyone,” thus bringing Michael’s Premium Melting Cheese to market.

  • BelGioioso Cheese is bringing Polly-O Shreds back to retailers nationwide.
  • Giuseppe Pollio, an Italian immigrant, started making and selling high-quality, authentic cheeses from his home in Long Island, N.Y., in the early 1890s, and in 1899 he opened “Pollio Latticini” (Italian deli store). In the 1940s, when polio became an epidemic, his son Albert recognized the company needed to change its logo because of the similarity between the company’s name and the disease. That’s when Polly the Parrot and “Polly-O” were born.
  • The company and its manufacturing facility in Campbell, N.Y., were acquired by Kraft Foods in 1986. (I worked there from 1992 to 1993.) In 2015, Kraft announced it would be closing the plant. Upstate Niagara Cooperative came in and purchased the plant to continue making Polly-O cheese for foodservice customers and limited retail options. Upstate has now sold the plant to BelGioioso Cheese based in Green Bay, Wis.
  • BelGioioso specializes in artisan Italian cheesemaking and recently acquired the Polly-O brand from Groupe Lactalis, which acquired Kraft’s natural cheese division and brands last year. Federal regulators required the company to sell off the Polly-O brand due to monopoly concerns.

  • HIGH-PROTEIN CHEESE FUNCTIONS AS A DIPPER (posted October 12, 2021)
  • Eatlean introduces Nibbles cheese snacks.
  • New Eatlean Nibbles cheese snacks contain Eatlean cheese sticks along with two side compartments, one containing flavored beans and seeds and the other a savory, sugar-free sauce for dipping sauce. Dip the cheese in the sauce and then the crunchies for a new take on cheese snacking.
  • The three varieties are: BBQ, Sweet Chili and Spicy. The latter includes a mix of tandoori-flavored seeds and pulses with a portion of sugar-free piri-piri sauce.

  • The new line of Irish cheddar cheeses comes in two varieties: Extra Sharp Irish Cheddar and Aged Creamy Irish Cheddar.
  • The cheeses are produced exclusively in Ireland’s historic Golden Valley dairy region. They are made with milk from grass-fed cows grazing some of the world’s most fertile pasturelands, rooted in nutrient rich glacial soil.

  • Warrnambool Cheese & Butter released the Heritage Flavours range.
  • The Aussie cheese company debuted Vintage Cheddar, Lightly Smoked Cheddar, Red Bell Pepper Cheddar and Maple & Toffee Cheddar in 200 gram blocks.
  • When creating the new varieties, the company took into consideration the science behind contrasting flavor combinations.
  • "With the new Heritage Flavours range we looked at how we could use different sweet, salty, spicy and creamy flavours to challenge the traditional cheddar and create flavour explosions in every mouthful," says Philip Forbes-Pryer, product manager.
